Moroccan Beet Salad Make it

Ingredients

    medium beets, boiled and cut into 1-inch cubes

  • 1

    garlic clove, finely minced or mashed through a garlic press

  • 2

    tablespoons fresh flat-leaf parsley, finely chopped

  • 3

    tablespoons Mina extra virgin olive oil

  • 1

    tablespoon lemon juice

  • Salt and black pepper, to taste

Preparation

  • Step 1

    In a pot, boil beets on medium-low heat for 45 minutes or until fork-tender. Place pot under running cold water until beets are cool enough to be handled. Peel and cut into 1-inch cubes. 

  • Step 2

    Add beets and all other ingredients into a bowl and gently mix. Serve and enjoy!
